Cooking with Aubri & D: Cilantro Lime Chicken & 4 Tips for Diabetics

November is Diabetes Awareness Month! What better time to try out a new recipe that is beneficial for your HEALTH! I really enjoyed hanging out in the kitchen with my wonderful sous chefs Aubri & D to prepare an entree which is easy to make, budget and diabetes friendly. The kids really enjoyed creating the sauce for the chicken and after you pop it in the oven for approximately 20-25 minutes you have a great healthy friendly diabetic entree that you can enjoy with your family! Aubri's mom, the beautiful, smart and fashionable Dr. Nia Johnson was kind enough to give us 4 tips Diabetics should always think about and incorporate into their lifestyle:

1. Eating 3 well balanced meals per day with good protein (chicken, fish, beef) and good complex carbs (sweet potatoes, brown rice, multigrains, beans, fruit) with 2 snacks in between will keep your glucose metabolism in check.

2. With the help of a physician, diabetics should count their carbohydrate intake. Carbohydrates are absolutely needed by the body for energy, but diabetics should choose complex carbs that take longer for our body to convert to sugar. Too many carbs, especially simple carbohydrates (sugar, white potatoes, white rice, etc) will result in rapid blood sugar elevation

3. I personally think that all diabetics should carry a well balanced snack anywhere they go! They don't want to go too long without eating because their blood glucose levels can fall, especially if they are taking anti-diabetic medication! Good snacks to carry: apples with natural peanut butter, fruit with cheese, trail mixes, if you have a fridge, greek yogurt and berries, deli turkey meat with fruit!

4. Last, type 2 diabetics make insulin, but are resistant to it. If they lose fat and gain muscle, they can rid themselves of the disease. Diet is not only important in supporting fat loss and muscle growth, but regular exercise with cardio and weight training is important!!!!
